May 11 (Saturday) - Rosé in May, 12pm-2pm. Give us a call ASAP to reserve you spot for this annual event.

May 25 (Saturday) - Bar will be closed 12pm-4pm for a private event.


News 🗞

The big news for me this week is that we got our third delivery for our Dry Aged Program in today!!! I'll let you guess what it is... check out the Food Feature to read more. Otherwise, just a regular old cheese fest down here. In addition to our normal selection on our menu, we have several special cheeses on offer this weekend at the bar, as well as more options available in the store to take home with you. Cow, goat, sheep, you name it, we got it. Now as a reminder, we are just two weeks away now from our annual Rosé in May event, and there are only a few spots remaining. This is a tasting luncheon that will include six wines and heavy hors d'œuvres. We've been carefully crafting the perfect springtime menu to go with all of the delicious Rosés on deck, which we are slowly but surely narrowing down as well. That said, if you'd like to attend, give us a call ASAP for one of those remaining spots.



Wine Feature ⭐️

The feature this week is actually a dual feature that comes to us from Spain, Bodegas Peñafiel 2021 Miros de Ribera Roble and Bodegas Peñafiel 2019 Miros de Ribera Crianza. These wines are both Tempranillos from the Ribera del Duero region of Spain. Tempranillo is Spain's #1 red wine, and it is a big, age-worthy red that pairs well with beef and lamb. The 2021 Roble, which contains small amounts of Cabernet Sauvignon and Merlot, "has a fresh nose, with wild berries and dark fruits aromas. The oak is very well integrated into the wine, providing well layered high toast coffee notes that show a soft aging in oak barrels. On the palate it tastes rounded, powerful and elegant." The 2019 Crianza is a step up from the Roble due to additional oak aging and higher quality grapes. It is 100% Tempranillo and has "a very elegant nose with some mineral notes, balsamic, blackberries, raspberry, a background of spicy notes from the wood. Lively on the palate with a very good structure. The wine has a long finish and it shows fleshy and elegant." Both of these wines are rated over 90 points and are priced at $24.99 and $39.99, respectively. Enjoy them with a delicious dry-aged steak.



Wine Pick 🥂

This week's pick comes from on of our favorite producers, which you've heard us talk about before: Field Recordings. It's the Field Recordings 2023 Shucks White Blend from Paso Robles, priced at $21.99. If you've had any of the Fableist wines we have in stock, this is the same winemaker, Andrew Jones. Jones is a nursery fieldman, which means he plants and tends to vineyards all over the Central Coast of California. With that kind of exposure, he picks locations that he thinks have great potential, and he makes wines with grapes from those specific vineyards. These wines are minimal intervention, meaning they use no chemicals or additives, so the wine is a true expression of its terroir. This Shucks blend consists of Melon de Bourgogne and Pinot Blanc... the exact percentages are unknown because 50 years ago when the vineyard was initially planted, the grapes were mislabeled, so what was supposed to be 100% Pinot Blanc became a blend of Pinot Blanc and Melon, creating a wine with crisp acidity and delicate notes of citrus, apple, and pear. This wine, the Kitties Table Wine (a chillable red), and the Super Gnario Red Blend which you all enjoyed as the glass pour at the bar recently, are all one-time only deals for us... we unfortunately won't be getting more, so the time is now to give one a try.



Food Feature 🥩

As mentioned, our Dry Aged Program is back this week, and what we have for you today is (drumroll, please)... Dry Aged Short Loin! Which of course means I cut them into Porterhouses. Some of the most tender and delicious cuts of beef from from the Short Loin. If you're not aware, on one side of a Porterhouse is a Strip Steak, and on the other side is a Tenderloin, so really, this is two steaks in one. Already a very tender cut of beef, the 32 days of dry aging will make it even juicier and more tender. Are you drooling yet?? This is a piece of beef that I would run away with. It's my baby. Come and grab one for $26.99/lb.



Oyster Feature 🦪

We have our tried and true favorite, Summer Loves, back in this week. These oysters from Rustico, PEI have a buttery, creamy meat that finishes with a perfect balance of salt and mineral notes. Can't get any better. They are on the smaller side this time, but that just means they'll be packed with flavor.

Final Thoughts 💬

Well, knock on wood, but it looks like the warmer temperatures are finally coming for us. At least for the weekend... I don't trust any weather forecast beyond that. A quick Google search informed me that a 5-day forecast can accurately predict the weather 90% of the time. Uh... I don't think those people did any research in the Midwest. Warm or not, sunny or not, we hope to see you soon.
