I'm sure everyone is excited for the holiday weekend. We'll be closed on Monday for Labor Day, but we have a fun couple of days planned for you beforehand. Hopefully you're not all going out of town... First, a light and fresh food special to pair with the smothering heat wave outside: Sashimi & Ceviche! That's right, we're two for one in the food specials department. Our Sashimi will be made with Fresh Ahi Tuna OR Hiramasa and served simply with Wasabi and a Ponzu dipping sauce. The Ahi Tuna we've had, and it's as good as ever. The Hiramasa is new to us, and it might just be your new favorite. Hiramasa is also known as Yellowtail Kingfish or Yellowtail Amberjack. That's too many names for one fish, if you ask me, but I guess there are different names depending on where exactly it's from. Regardless, this is a premium fish, highly revered in Japan for its higher fat content, creamy texture, and rich flavor. The Ceviche will have the Hiramasa cured in a chile-citrus juice, served with pickled mango, fresh herbs, hearts of palm, onion, and more peppers. It's a sweet & sour & spicy Peruvian recipe that we're excited to try to really highlight the fish. And if you come down here on Saturday, we'll have the Ohio State game on for viewing and Buckeye Beer in the fridge to enjoy with it. That's right, football, beer, and raw fish. The perfect tailgating if you ask me!
Wine Feature ⭐️
This week's feature comes to us from the beautiful south of France: Château Fontanche 2019 Les Uyères. This is a classic French blend of 40% Grenache, 40% Syrah, and 20% Carignan. No, it's not from the Rhône, if that was your guess... it's from Languedoc-Roussillon, the region just west of Provence. Languedoc-Roussillon is actually the largest wine-producing region in the country, with 1 in 3 French wines grown and produced there. It's a region full of small, family-owned wineries dating back generations. Château Fontanche is located in Saint-Chinian, one of the region's mot prestigious appellations, situated between the Pyrenees and the Mediterranean with 60+ year-old vines. It's aged in stainless steel instead of oak, so the fruit is the real star of the show here. "The wine is complex, spicy and mineral, with aromas of ripe red fruits, licorice, and garrigue spices. On the palate, it is fruity, spicy, and bold, with a long well-structured finish. Drink over the next 5 years with meats, cheeses, or hearty dishes." At just $19.99, it's a blend worth trying.
Wine Pick 🥂
Have you had a Pecorello before? We sure hadn't, but it's quite an enjoyable white wine and my pick for this week: Ippolito 2022 Pecorello Bianco. It's described as "complex and elegant on the nose with notes of citrus, yellow-fleshed fruit and mineral tones. The palate is vibrant, balanced, and persistent." This wine is from Calabria, Italy, also known as the toe of the boot. Calabria, with its extreme temperatures, is largely known for the production of elegant reds, so this bottle is more the exception than the rule... but the producer, Ippolito, is working to change that. Ippolito, located in the heart of Calabria, has been working for decades to discover, rediscover, and preserve the ecosystem and viticultural heritage of Calabria, including reviving several grapes like Pecorello which had been lost to history. So if you see a bottle from Ippolito, you know it's a little bit special. And if that weren't enough... it's Fair Week, and there's a sheep on it. I'd say that's worth $19.99.
Food Features 🍔
Back just in time for your Labor Day cookout, we have the Fresh Wagyu Burgers, 4-packs for $17.99. This has been one of our best sellers for years now, and if you try them, you'll see why. They are large 1/2 pound burgers with all of that fat marbling blended in to create a juicy and tender burger. I'm not sure you could do anything to mess these up. Wagyu is also known to have more omega-3 and omega-6 fatty acids, so I think technically that means we can consider these a health food. If something a bit more upscale would be desired we're cutting up FRESH Ribeye and Beef Tenderloin. We've got some great provisions to make this holiday weekend extra special.
Oyster Feature 🦪
This week, we have in Sand Dunes from PEI. "Recognized for their unique bright, green shells, they have a dynamic flavor profile that combines a salty vegetal taste with a buttery finish that lingers on the palate. They're grown on the hard, sandy bottom for their entire life where they are naturally tumbled by the tide, which gives them deep cups and heavy shells." These guys are pretty huge, honestly, but they're good... medium brine, a melon-like sweetness, and fully, savory meat. Try these with a glass of the Moschofilero at the bar.
