Dan’s Wine Feature

Walt’s back! Need I say more…Always one of my favorites from Kathryn Hall. This big Pinot Noir is rich and decadent and deserving of a fine cut of beef or pork. Pork and Pinot have always been a favorite of mine and with Fall’s arrival this week this is the perfect selection. Tasting notes describe it as having “good depth of flavor and great structure make this wine appealing and complete. Smoky aromas of clove, cedar and black pepper lead to concentrated and rich black-cherry and red-cherry flavors on a moderately tannic texture”. The depth of this wine makes this $37.99 very inviting as a big Fall weather Pinot, if you remember it, get more, if you missed out the last time get on down here!

Dan’s Pick

This week’s pick is 2019 Melon De Bourgogne from Jolie-Laide, this new white is a great addition to our shelves. Sourced from the historic Rodnick Farm in Chalone, planted by Richard Graff in 1985, these vines were originally thought to be Pinot Blanc. This is a round, tropical iteration of Melon, with aromas of papaya, lemon meringue, balsa wood and fresh sourdough bread. The palate is focused but fleshy, showing Asian pear and crushed chalk notes, leading to a soft and subtle finish. A fun, flashy California take on this Loire grape. Our domestic whites needed a little attention and this $27.99 bottle fit the bill perfectly, great by itself as an aperitif or paired with any fish from our selection. A new wine that I’m sure you will agree deserves a spot on our shelves.

Food News

If someone had told me that I would ever have 120lbs of beef, 50lbs of pork and 60lbs of fish in our coolers I would have cut them off…We’re stocked up this week, from Iowa Prime Tomahawks to Fresh Florida whole Pompano. Trying a new purveyor this week, bringing in a few select items. What we’re hoping is that this is a provider of great meats and seafood that will allow us to order in any specialty food you’re looking for and have it in 3 or 4 days. Stay tuned for more food news…

Food Feature of the Week

Schweinshaxe is the word of the week! Crispy and delicious Pork Shanks from a premium mid-west Pork producer. I mean, look at that picture how can this not be on your Hometoberfest menu? (Instructions follow),

1. Preheat your oven to 350F.

2. Place sliced onions in the bottom of a 8x8 baking dish.

3. Rub the skin of each pork hock with half of a garlic clove. After rubbing, add the garlic to the onions in the baking dish. Rub roughly 1/2 Tbsp of salt into the skin of each pork hock. Nestle the hocks, meaty side down, in the onions.

4. Pour the beer around the hocks.

5. Roast the hocks in the preheated oven for 3 hours, until the skin is crisp and the meat is fall-apart tender. (Check the hocks every hour to be sure they haven't fallen over and there is still enough moisture in the bottom of the pan. Add hot water if the pan seems to be scorching.)

6. Each hock is traditionally served individually, with a fork and sharp knife, but most people find it easier to enjoy the crisp skin by just digging in with their hands.

7. Serve with boiled potatoes, potato dumplings, or spaetzle, and braised red cabbage or sauerkraut. (And don't forget the onions from the baking dish!)

Final Thought

Cooler weather and shorter days are upon us.
