July 9 - Saturday special BBLT and Gazpacho, Chelsea makes an unctuous Gazpacho. I didn’t ask Chelsea if this was OK but I already bought 30 pounds of slab bacon and 12 pounds of Canadian Bacon 😬. A little lettuce, 15 pounds of Tennessee tomatoes a couple jars of Duke’s Mayonnaise, Oh yeah…I’m looking forward to it. You don’t need reservations for this because we’ll be serving them all day long.

We brought in a new fish this week Montauk Tilefish. What’s that?? It’s a fish sourced from the cold waters off Montauk, Long Island using sustainable fishing practices. Golden-spotted tilefish are as gorgeous as they are delicious. Meaty and lean with a lobster-like sweetness, tilefish has a mild flavor easy to shape with marinades and seasonings. It's beautiful broiled or baked in olive oil and something I know will be delicious, had this for dinner last night.😋
Wine News🍷
Not a great deal of wine news this week… supply chain issues are still an issue and we’re beginning to see some sharp increases in pricing. On those items we are either biting the bullet or switching it out to a different wine. The wine business is like any others these days, trying to manage price increases, delays in shipment and always looking for someone who wants to learn the business. Some days it can be a struggle, other days…I just start drinking earlier🤷♂️.
Dan’s Feature
Conn Creek Anthology 2018 Cabernet is my feature this week. This 100% Cabernet is “dark garnet in color, with layered aromas of violets, cocoa powder, boysenberries, tobacco and a touch of gravel. Medium weight in body, black cherries intertwine with sweet tobacco and cocoa into a broad, silky mouthfeel and finish”. If you like Cabernet (I mean 100% Cabernet) and one that has spent 19 months in new French Oak, then this wine is for you. Remember most Cabernets aren’t 100%, they’re blended and are only required to contain 75% Cabernet. So if Cabernet is where you tend to go, this may just be the bottle for you. Rated 90+ and at $69.99 this is the wine for Dad for Father’s Day. This bottle and a fresh cut steak may be just where Dad wants to be on Sunday.
Dan’s Pick
My pick for this week is a new white blend from Oregon, Ovum 2021 Big Salt. No, don’t worry it’s not a new trend to add salt… Big Salt is a blend of Riesling, Gewurtztraminer, Sauvignon Blanc and Muscat making this a wine that’s way, way too easy to drink and at $19.99 affordable. This co-fermented blend gives way to penetrating aromas of pear blossoms, ginger and kumquat which lead into a lively palate with citrus skin flavor, a dash of sea salt and drying minerality. It's a well-balanced, unique white wine with splendid food pairing options.” Sure I agree with all of that but I go back to my original description “it’s just way too easy to drink”. Sure it’s Fathers Day but ya know, get Dad a big steak, turn him loose on the grill and you stay inside and prepare the sides, especially the side of a big empty glass for you!

I read an interesting article this past weekend it centered around food origin or simply put, knowing where your food is from. That got me thinking, and I began to recognize that’s exactly what we have tried to do down here. There’s really not a product in inventory that we haven’t searched out. Do we know where our salmon comes from? You bet! We’ve researched them all: Bay of Fundy, Scottish Loch Duart, Icelandic and Copper River. Beef and Pork products as well…We don’t want to procure these products from any one but the best and we want all of our goods to come from environmentally friendly and sustainable environments. Does it cost a little more? Sure, but it’s worth it! We like bringing in products that are the best available and at a price that’s still affordable. We get the best. We seek items out, diligently research where each and every item is coming from before we share them with you. These are the same items that we’re taking home to our families as well. Just another reason why were bringing in the best…

Final Thoughts
Whether you’re a Dad or not, Sunday is a day to celebrate Dads… C’mon, we all had one and spending a day with or remembering one is what this weekend is all about. Fortunately, I have both, a son who is now himself a Dad, and a Father that I have remarkable memories of. Do I need a day to remind me of both, no…but as long as it’s on the calendar I know what I’ll be thinking about. Happy Father’s Day to all!
