With weather like this, we had to bring back the Fresh Ceviche! If you didn't get to try it the last time we whipped it up, you missed out. It's Fresh Pacifico Striped Bass cured in lime and orange juices with tomato, onion, mango, and a few other things I'm sure I'm forgetting. It's light and refreshing, and the way the flavors meld together is beautiful. You can find Ceviche all over the Caribbean and Latin America, but I did some quick Googling, and apparently it's originally Peruvian and is recognized by UNESCO as Intangible Culture of Humanity. Intangible culture, that's what we do here at the Wine Merchant. But don't be intimidated, come on down anytime Thursday or Friday, or sometime on Saturday evening (we are closed 12-4pm but open after) and get a taste of this delicacy while supplies last. Otherwise, we hope to see you all in to stock up for your holiday weekend!
Wine Feature ⭐️
Well after several months of trying, we finally got this wine in. It's Résonance 2021 Pinot Noir. This wine was in Wine Spectator's Top 10 Wines of 2023, and it's under $100. Well under, in fact --- only $39.99! This Pinot Noir out of Oregon's Willamette Valley expresses the best that Oregon has to offer. It's owned and operated by the famed Burgundy wine house, Maison Louis Jadot, so they already had many decades of perfecting Pinot Noir under their belts before acquiring Résonance in 2013... since 1859 actually, the same year that Oregon received its statehood. At Résonance, every wine and every vintage is different. Grapes are hand-picked, there is minimal intervention in the making of the wine, and the French oak barrels are custom-made based on the tightness of the wood grain and even the soil in which the trees grew. There is attention to every detail. With this bottle, "the nose is expressive of wild strawberry, mulberry, rose, and cedar. The palate reveals a harmony between fresh fruitiness and savory richness, with a persistent, vibrant finish." We only have six bottles, so get here quickly!
Wine Pick 🥂
It's not often we get in a canned wine, so you know when we do, you know it's going to be good. The pick this week is Leitz Out 2021 Riesling. It comes in a 4-pack, and each can is 250mL, so you're getting a whole liter of wine for $24.99. From the tiny region of Rheingau, Germany, which is small but perfectly situated for growing Riesling, this wine by Josi Leitz is "delicately dry, with crisp acidity, juicy aromatics and it is wildly drinkable." It has notes of citrus, pear, and green apple with zippy acidity and a well-balanced touch of sweetness and absolutely no trace of the metallic note than many canned wines have. If you're going to the lake or to the pool this weekend, this is an easy choice to throw in the cooler. Get it crisp and cold, and it will be gone in no time.
Food Feature 🐠
Pacifico Striped Bass is back this week! From just off the coast in Baja California, this fish is a workhorse; it can do anything. With a clean taste and semi-firm texture, it's famous for its versatility. It is "ideal to cook with because the fat content allows for many preparation methods, including whole, raw, grilling, poaching and braising. Cooked it has a flaky texture with a skin that crisps beautifully." We use it for our Ceviche, but you can do a million other things with it. Now if you're grilling this weekend and want something a little heartier, we have more Fresh Prime Ribeyes for $24.99/lb that we just cut and Fresh Wagyu Burgers (4-pack) for $17.99. Hopefully the rain holds off so the grilling can happen, but if not, a cast iron will do just fine.
Oyster Feature 🦪
We snagged some more Pink Moons this week! After having them two weeks ago and seeing the reaction you all (and we) had to them, then seeing them sold out last week, we're very pleased to have them again. If you don't recall, these medium-size oysters from PEI are the perfect balance of creamy, salty, and mineral. Their flavor is great for baking, but they really shine on the half shell. Come try some with a glass of our new sparkling rosé, Chemistry from Willammette Valley.

I may not be in the United States this weekend, but that won't stop me from celebrating Memorial Day. Make sure you all take the time to remember all the men and women who gave their lives fighting for our country. Since the Revolutionary War, 646,596 Americans have died on the battlefield, with another half a million dying from non-combat causes. It's easy to forget that sacrifices that others make for us, so even if it's just for a few minutes, take some time on Monday to think of them. I will be 5000 miles away doing the same.
